I haven’t read them all! (yet) For now, I’m just linking to each page so I have an easy-to-use interface for the OED. It keeps it low-tech on my end (just a simple list of html links) and it lets the Internet Archive handle all the bandwidth and page presentation.
I considered listing every word, but it’s a dictionary – you’re supposed to be able to look up any word easily using the page headers. With the 1911 Encyclopedia Britannica I will probably list each defined term and link to its page.
Summa minutiae 
When you say “complete,” am I to understand that you have read every entry under the letter E, or simply that you are acquiring all the entries?
